"Vinaigrerie La Guinelle" ("La Guinelle" vinegar producer)

Above the hamlet of Cosprons, overlooking the Bay of Paulilles, among vineyards and olive groves, the "Vinaigrerie La Guinelle" (a local vinegar producer) is installed in plain nature. Here, in this unique place, vinegar is elaborated with Banyuls, a naturally sweet and aromatic wine, product of its "cru" (meaning: from its inception, or in terms of location: from its region, from the local vineyard). 

Installed outdoors, the wine barrels wait patiently while nature does its work through an exclusively natural process of acetic fermentation. Natural, without mixing or addition of breeding bacteria, the wine's aromas are preserved which will result in this particularly tasty wine vinegar. Today, the "Vinaigrerie La Guinelle" is the only one in France producing its vinegars according to this traditional method, preparing wine vinegar based on the natural fermentation process of its bacteria's, the so called "orléanaise" method.

Once the vinegar produced in the barrels, it stabilizes and clarifies in specific glass bottles exposed to sunlight for more than a month before being bottled on site.

Vinaigrerie du Mas Blanc

Since four generations, the family Parcé develops its famous Banyuls, to which one must add, the rather confidential production of vinegars prepared by their grandmother.
Their vinegars are used by leading chefs, top master chefs and sold in the finest delicatessens.

All "Mas Blanc" Banyuls vinegars have an average age of maturity of 15 years.
